Two Japanese Fermentation Ingredients at the Heart of YuBi
01 — Aged Sake Lees Extract
KOHAKUYUKI
Not ordinary sake kasu.
YuBi contains an extract made from sake kasu produced by a historic Japanese sake brewery.
Fresh sake kasu is further matured at low temperature for more than 1,000 hours through a carefully controlled two-stage fermentation and aging process.
During this maturation, the originally pale sake kasu gradually develops a distinctive amber tone.
The result is KOHAKUYUKI — “Amber Snow”, an aged sake lees extract developed by Japanese cosmetic ingredient specialist Koken together with the sake brewery.
KOHAKUYUKI naturally contains fermentation-derived components including:
- Amino acids
- Natural sugars
- Organic acids
- Glucosylceramide
- Ferulic acid
- α-Ethyl Glucoside (α-EG)
These components make aged sake kasu especially interesting as a Japanese fermentation ingredient for modern skincare.

Why Age the Sake Kasu for More Than 1,000 Hours?
Fresh sake kasu already contains valuable fermentation-derived components.
But maturation changes it.
According to Koken’s ingredient research, the aging process increases several components present in sake kasu, including amino acids and other fermentation-derived compounds.
This is why YuBi uses aged sake lees extract, rather than relying only on ordinary sake kasu.
It represents something deeply Japanese:
taking time, fermentation, and craftsmanship to create greater value from a traditional ingredient.

Over time, low-temperature aging transforms fresh sake kasu from a pale cream color into a deeper amber tone, creating the distinctive source material behind KOHAKUYUKI.
02 — Alcohol-Free Rice Ferment
AF SHONAI BIJIN
YuBi also contains an alcohol-free rice ferment made from Japanese sake.
AF SHONAI BIJIN begins with rice grown in Yamagata, Japan and junmai sake brewed using the traditional Kimoto method, one of Japan’s historic sake-brewing techniques.
The cosmetic ingredient is then processed to create an alcohol-free rice ferment suitable for skincare.
It naturally contains components created through rice fermentation, including:
- Amino acids
- D-amino acids
- Natural sugars
- Lactic, malic and succinic acids
- Ferulic acid
- Kojic acid
- Other fermentation-derived components
These naturally occurring compounds contribute to the hydration and conditioning properties that make rice fermentation so compelling in Japanese skincare.

From a Historic Japanese Sake Brewery to Your Skincare Ritual
The sake and sake kasu behind YuBi’s fermentation ingredients come from a Japanese brewery with approximately 400 years of history.
For us, this matters.
YuBi was not created simply by adding a fashionable “fermented ingredient” to a serum.
We wanted the ingredients to have a real origin — connected to Japanese craftsmanship, sake brewing, rice fermentation, and generations of knowledge.
The same brewery produces both the sake and sake kasu used as the source materials for YuBi’s key fermentation extracts.

What Is α-EG?
A fascinating component created through sake fermentation.
α-EG, or α-Ethyl Glucoside, is a naturally occurring compound associated with sake fermentation.
It has attracted scientific interest in Japan, particularly in research exploring the relationship between sake-derived compounds and skin.
YuBi contains fermentation ingredients that naturally contain α-EG.
Rather than treating α-EG as an isolated “miracle ingredient,” we see it as part of the much larger and more interesting story of Japanese fermentation.
